FRIED RICE AND CHICKEN RECIPE

Fried rice is second most popular rice dish in Nigeria. A must have at parties and a major meals in most homes, especially during festivals.
The process of preparing fried rice is a bit complicating but gets easier with time.
Follow this step by step process to prepare and enjoy this delicious delicacy with friends and family.
Ingredients
4 milk cups of rice
Green pepper
5 cups of sliced cabbage
5 cups of sliced carrot
Onion (2 to 3 bulbs)
Green beans (1.5 to 2.5 milk cup)
Peas (0.5 milk cup)
Liver (0.5kg)
Groundnut oil (150ml)
Curry (Use as desired )
Maggie (use as desired)
Chicken
Butter (250g)
Salt to taste
Instructions
1) Chicken should be parboiled with ingredients (salt, onion, Maggi, curry, thyme, chicken spice)
5-10 minutes
2) Bring out chicken from boiled water and keep aside for frying
Note : add enough water to parboil the chicken, do not allow water to get dried.
3) Deep fry the chicken in Vegetable oil.
4) Chop onion, liver, carrot, cabbage, green and pepper, aside.
Note:
What actually takes time is the preparation and not the actual cooking of fried rice
5) Pour chicken water, in your measured washed rice and cover till it gets done, 25-30 minutes
6) Place your frying pan on the fire.
7) Divide all of this into two, I mean both the rice and all ingredients.
Note:
If your fry pan is big enough, there might be no need to divide rice and ingredients.
8) Add about 100-120g of butter or groundnut oil into the frying pan and leave for a minute.
9) Add onions stir for a minute, carrot, green beans, sweetcorn simultaneously, stir and fry for 2mins
10) Add curry, stir and add cabbage, continue to stir.
11) At this point a mixture of yellowish carrot, cabbage, green beans will be visible.
12) Add liver, green pepper, salt, Maggi and thyme to your taste.
13) Add your rice to the frying ingredients gently stir for about 3-4 minutes, stir till it is dried to satisfaction.
14) Apply the same method to remaining portion, if you divided the rice and ingredients in two places.
15) Fried rice is ready to serve and eat.
